Love the blog, I have been lucky enough to have travelled in the Arab World and experience these types of food in their home environment, so this is a great resource for me to try and recreate some at my home. I especially like this one because I am interested in Halal Charcuterie!

Makdous is very tasty and well worth the wait. The only thing I did was not to use the seeds in the chili as I do not like so hot, but other than that it is a wonderful dish. My mother in law also used red bell peppers instead. so good. Small eggplants are hard to find here but keep looking you will find them in the gourmet sections or stores or maybe even in the Arabic or Indian stores.
