Fresh Fruit cakes - Upside down Plum Cake

During the Summer Season, I like to take advantage from the fresh fruits I can find in the market , I like to eating them fresh, and more enjoy baking them and highlighting their wonderful flavours.

Upside down fruit cake is one of our favourit cakes in the Summer and Plums are one of the fruits I really enjoy caramelizing and baking them. Specially if accompanied with Frangipan or toasted Almond and Amaretto liqueur.

Tart Tatin is also a fruit cake, and I did some in a muffin tins as individual servings.. I need to have some free time to post about them.

I love the plums for an upside down cake in lieu of just plain pineapple! Not only does it look stunning with all that ruby color, but delicious too! Also, love your idea to open up your readers to Middle Eastern cooking with your new challenge. I'll have to take part once my camera is fixed *pout*
