Lebanese Potato Salad

Today I am presenting to you a delicious, vegetarian potato salad very simple to prepare and only needs couple of ingredients which is found in your pantry.
This salad is excellent served at room temperature, or as a side dish, great for outdoors BBQ Parties, healthy refreshing and nutritious. An excellent Vegan dish.

ingredients:
1 pound baby potatoes
1 cup cleaned and chopped Italian parsley
1/2 cup cleaned and chopped green onions
1/3 cup fresh lemon juice
1/2 cup good quality olive oil
salt, pepper, chili flakes (optional)

clean and wash the parsley and strain, same with the green onions. Chop the veggies and prepare the dressing...
wash and boil the potatoes, and when they are done, drain them. Using a towel in your hand
try to peel the potatoes when they are hot. Add the chopped herbs and dressing, adjust the seasoning to your taste and mix well
Enjoy.

Every time I think of our potato salad I get hungry for it! I had it in mind today as I was making that shakshouka with the potato; I mean Lebanese cuisine is so healthy! Thanks for the background info on Elissar.

Je fais une salade similaire et c'est vrai que c'est très bon.

This as a bit different from what I'm used to...usually they have mayonnaise in them...this sounds amazing!

Salam Arlette,
This delicious potato salad is calling my name. My mom made her potato salad the same way, but in Morocco instead of lemon and green onions, we use white vinegar and normal round onions with some coriander.
The presentation is gorgeous! Great pictures as usual.

Very true, regular potato salad has mayonniase which I can't serve to vegans but this looks like a delicious alternative! :)

Arlette, this looks so light and refreshing. You've given it to us at just the right time of year, as well.
I have a winter version - I' believe its origins are Greek - that roasts potatoes with lemon and garlic. Since we really like that I know we'll love you lighter version.
